DESCRIPTION OF ESTATE
The "Fattoria Lavacchio" is located at the
top of Montefiesole, 400 metres above sea level, along the Roman road
which used to go from the river Sieve to Florence. In ancient times this
place was inhabited by Etruscans. Human settlement on this site was constant
over the centuries, leaving consistent traces such as the villa built
by the noble Florentine Peruzzi family. The "Fattoria Lavacchio" makes
wine using the grapes from its vineyards. In 1991 a new vat room was built
with steel containers which have the possibility of controlling the temperature
of fermentation. The wood ageing of the wines is carried out underneath
the farmhouse in an underground room covered with a brick vault. Nearby
is the oil-jar room where the extra vergin olive oil made from the farm's
own olives and milled in the farm's oil-mill using the classic pressure
cycle, is stored. A farm holiday centre has been organized in a farmstead
near the farm office.
HISTORY OF THE ESTATE AND ITS PEOPLE
Lavacchio was bought by the present owners
in 1977 when it was in a state of abandonment. Today a large part of the
buildings have been restored and the entire cultivational area now once
again produces oil, wine and cereals.
BIOGRAPHY OF THE OWNER
An architect who has lent himself to agriculture,
Giuseppe Lottero was born in 1949 in Genoa, where he carries out his main
profession. He has three children and his hobby is wine (he has passed
three Sommelier courses). His aim is to obtain top level wines from his
vineyards.
